Celem badania było określenie, w jakim stopniu cechy socjodemograficzne, postrzeganie siebie w kontekście stylu życia oraz wiedza żywieniowa determinują częstość spożywania makaronu i herbatników z mąki pełnoziarnistej. Badanie przeprowadzono w 2013 roku w grupie ogólnopolskiej 1000 dorosłych konsumentów. Prawie 2/5 badanych nigdy nie spożywało makaronu i herbatników z mąki pełnoziarnistej, a około 15% badanych spożywało je z częstością 3 lub więcej razy w tygodniu. Istotnie statystycznie więcej mężczyzn (42,8%) niż kobiet (33,5%), najmniej osób z wykształceniem wyższym (27,1%) oraz osób najbardziej pozytywnie oceniających dochód (25,0%) nigdy nie spożywało makaronu pełnoziarnistego. Osoby deklarujące przywiązywanie uwagi do naturalności charakteryzowało częstsze spożywanie zarówno makaronu (18,8%), jak i herbatników (16,3%).Większą częstość spożywania makaronu deklarowały osoby zorientowane (16,9%) niż nie zorientowane na przyjemność (10,5%). Osoby reprezentujące dużą wiedzę na temat produktów zbożowych i błonnika stanowiły najmniejszy odsetek osób spożywających makaron (7,8%) i herbatniki (5,1%) z mąki pełnoziarnistej z największą częstością. Zróżnicowanie częstości spożywania produktów pełnoziarnistych wskazuje na konieczność uwzględniania tych różnic w podejmowanych działaniach ukierunkowanych na wzrost konsumpcji produktów zbożowych pełnoziarnistych. Artykuł ma charakter badawczy.

An aim of the research was to determine in what degree the socio-demographic traits, self-perception in the context of lifestyle and nutritional knowledge determine frequency of consumption of pasta and biscuits made of wholegrain flour. The research was carried out in 2013 in the whole-Poland group of 1000 adult consumers. Almost 2/5 of the respondents had never consumed pasta and biscuits made of wholegrain flour and some 15% of the interviewees consumed them with frequency of 3 or more times a week. Statistically significantly more men (42.8%) than women (33.5%), the least number of people with higher education (27.1%) and individuals most positively evaluating their income (25.0%) had never consumed wholegrain pasta. For the people declaring paying attention to naturalness specific was more frequent consumption of both pasta (18.8%) and biscuits (16.3%). The greater frequency of consumption of pasta was declared by the individuals oriented (16.9%) than not oriented at pleasure (10.5%). The individuals representing their great knowledge on grain products and dietary fibre constituted the lowest per cent of individuals consuming pasta (7.8%) and biscuits (5.1%) made of wholegrain flour with higher frequency. Diversification of frequency of consumption of wholegrain products indicates the need to take into account those differences while undertaking measures aimed at growth of consumption of wholegrain products. The article is of the research nature.

Целью исследования было определение, в какой степени социально-демографические черты, восприятие самого себя в контексте стиля жизни и знания о питании определяют частотность потребления макаронов и печенья из цельнозерновой муки. Исследование провели в 2013 г. в общепольской группе 1000 взрослых потребителей. Почти 2/5 опрошенных никогда не потребляли макаронов и печенья из цельнозерновой муки, а около 15% опрошенных потребляли их с частотностью 3 или более раз в неделю. Статистически существенно больше мужчин (42,8%), чем женщин (33,5%), меньше всего лиц с высшим образованием (27,1%) и лиц, наиболее положительно оценивающих свой доход (25,0%), никогда не потребляли цельзерновых макаронов. Для лиц, заявляющих о том, что они обращают внимание на натуральность, свойственно было более частое потребление как макаронов (18,8%), так и печенья (16,3%). О большей частотности потребления макаронов заявляли лица, целеустремленные (16,9%), нежели нецелеустремленные на удовольствие (10,5%). Лица, представляющие большие знания в отношении зерновых продуктов и пищевых волокон, составляли самый низкий процент лиц, потребляющих макароны (7,8%) и пе- ченье (5,1%) из цельнозерновой муки с наибольшей частотностью. Дифференциация частотности потребления цельнозерновых продуктов указывает необходимость учитывать эти отличия в предпринимаемых действиях, направленных на рост потребления цельнозерновых продуктов. Статья имеет исследовательский характер.
