In a recent book entitled 'Meaning and Universal Grammar - Theory and Empirical Findings' (Goddard and Wierzbicka eds. 2002), the authoress & colleagues have tried to identify the shared core of all languages on an empirical basis, that is, by studying a number of diverse languages and identifying what they share - both in their lexicon and their grammar. This shared core of all languages, established on the basis of extensive cross-linguistic investigations, can be seen as a universal mini-language, lying at the heart of all natural languages and suitable as a metalanguage for describing and elucidating them all. They call this mini-language the 'natural semantic metalanguage' (NSM), and the theory expounded in Meaning and Universal Grammar, the NSM theory of language and cognition. In this paper, the authoress is going to discuss some of the findings of this book from the point of view of the Polish grammar and lexicon. She has chosen for this purpose three thematic areas: evaluation (GOOD and BAD), mental predicates (THINK, KNOW, WANT and FEEL) and speech (SAY, WORD(S) and TRUE). Before turning to the 'conceptual grammar' of these areas (seen through the prism of the Polish language) she has to say something about the shared 'conceptual lexicon' of all languages, as it emerges from empirical cross-linguistic investigations.
Waldemar George was born in Lodz in 1893 as Waldemar Jerzy Jarocinski, the son of a manufacturer Stanislaw and Regina Eugenia Goldfeder. Well educated (fluent in 5 languages) George-Jarosinski published in Warsaw, as a seventeen or eighteen year-old boy, a volume of poems of patriotic content. To avoid imprisonment he left for France in 1911, where his uncle, Jean Finot, was the editor-in-chief of 'La Revue Mondiale'. He studied humanities at Sorbonne and started his journalist's career in 1912 in the periodical 'Paris-Journal'. As a French citizen he also changed his name into George - more French and easier to pronounce. During the years 1917-1922, W. George collaborated with 'pacifist' periodicals, supported the October Revolution and the idea of creating a people's university. At that time he was a well-known critic who published texts in the most prominent French and German periodicals concerning art. While promoting modern art, which he defined as independent art, he attacked Picasso as a primitive artist of the late 1920s and 1930s.The critic is considered to be the one who discovered Chaim Soutine, the main expressionist of the École de Paris. He also recognised the unknown, excellent cubist of Hungarian origin - Jozsef Csáky, as well as the painters Henri Epstein, Simon Mondzain, Mané-Katz, Oscar Miestchaninoff, and sculptor Jacques Lipchitz. George wrote a lot of articles about Louis Marcoussis and his wife Alice Halicka whom he knew and was friendly with. He also published articles in the Polish press was a correspondent of the Polish periodical 'Wiadomosci Literackie'. In 1922 George was nominated secretary of the exhibition 'Jeune Pologne' (Young Poland), which took place in the Museé Crillon in Paris. After the World War II he became the editor-in-chief of the periodical 'Art et Industrie', in the years 1956-9 he was editor-in-chief of the periodical 'Prisme des Arts'. George published articles in both periodicals. Waldemar George died suddenly of a heart attack on 27th October 1970 in Paris. According to his own wish he was buried in Saint-Martin des Champs-Manche in Normandy. He was an authority as a critic both in France and in Germany. He knew and was friendly with the most prominent artists, philosophers and critics of the first decade of the past century. George was the author of over a hundred books, and hundreds of articles.The critic discovered and promoted a great number of young, foreign artists. He wrote with expertise, erudition and talent about various branches of art. 12 Illustrations.
Celem pracy było przedstawienie systemów klasyfikacji mięsa wołowego w kontekście przychodu z produkcji mięsa o wysokiej i powtarzalnej jakości. Zakres obejmował analizę danych dotyczących systemów klasyfikacji tusz i możliwości prognozowania jakości mięsa w oparciu o tę klasyfikację. Przedstawiony został obowiązujący w Polsce wspólnotowy system klasyfikacji tusz wołowych (S)EUROP, który odnosi się do klas uformowania i otłuszczenia. Nie pozwala on na precyzyjne przewidywanie jakości mięsa. W Australii stwierdzono, że kruchość w sensorycznej ocenie mięsa wołowego odpowiada za 40% ogólnej oceny jakości. Zawartość tłuszczu śródmięśniowego (marmurkowatość), ma wpływ zarówno na kruchość mięsa, jak i smakowitość oraz soczystość. Dlatego zaprezentowano systemy klasyfikacji stosowane w USA, Japonii i Australii, w których do oceny jakości mięsa wołowego jest brany pod uwagę poziom marmurkowatości, co pozwala na lepsze przewidywanie jakości sensorycznej mięsa wołowego. Konsumenci na świecie są w stanie płacić więcej za mięso o określonej klasie jakości pod warunkiem jej gwarancji.

The aim of the article was to present systems of beef classification in the context of revenue from production of beef of high and repeatable quality, on the basis of literature data on beef carcass classification systems in the world and on the possibility of beef quality prediction within the system. The (S)EUROP system of the European Union that is applied in Poland was presented. It regards only the conformation class and fatness, so it does not give possibility to predict precisely the beef quality. In Australia, it is observed that in the sensory evaluation of beef quality the tenderness is responsible for 40% of the general quality. The content of intramuscular fat (marbling) is the factor influencing not only the tenderness, but also the meat taste and juiciness. Other presented systems of classification from USA, Japan and Australia are taking into account also the marbling level that results in better possibilities of beef sensory quality prediction. Consumers may pay more to buy beef characterized by specified quality class if it is guaranteed.
Celem pracy była charakterystyka rynku mięsa wołowego oraz jego spożycia na świecie i w Polsce. Konsumpcja mięsa wołowego charakteryzuje się dużym zróżnicowaniem w poszczególnych krajach. W Urugwaju spożycie mięsa wołowego wynosi aż 61,3 kg/osobę natomiast w Polsce konsumpcja tego rodzaju mięsa jest jedną z najmniejszych i wynosi 1,6 kg/osobę. Jednym z czynników mających wpływ na zmianę struktury spożycia mięsa jest wzrost dochodu ludności. W Unii Europejskiej, struktura spożycia mięsa ulegała zmianom od momentu poszerzenia wspólnoty o nowe państwa członkowskie. Jednym z czynników determinujących zmiany zachowań konsumentów na rynku żywnościowym jest ich edukacja żywieniowa. Na światowy handel mięsem wołowym wpływają także obawy konsumentów związane z chorobami zwierząt między innymi z pryszczycą i gąbczastą encefalopatią bydła oraz inne czynniki takie jak, np.: długi cykl produkcyjny, religia, wierzenia oraz aspekty etyczne i środowiskowe.

The aim of the study was to characterize the market in beef and its consumption world and in Poland. Consumption of beef is characterized by a great diversity in different countries. In Uruguay, the consumption of beef is up to 61.3 kg/person while in Poland the consumption of such meat is one of the smallest rate of 1.6 kg/person. One of the factors affecting the change in the structure of meat consumption is to increase the income of the population. In the European Union, the structure of consumption of meat has evolved since the enlargement of the community of the new Member States. One of the factors determining changes in consumer behavior in the food market is their nutritional education. On the global trade in beef is also affected by consumer concerns related to animal diseases, among others, Foot and mouth disease and Bovine Spongiform Encephalopathy. Trade is also affected by the long duration of the production cycle, religions, beliefs and ethical aspects and environmental.
Rosnące wymagania konsumentów, dotyczące świeżego mięsa skłaniają producentów do wykorzystywania różnych systemów pakowania. Stosowanie opakowań jednostkowych mięsa jest też niezbędne ze względu na konieczność ograniczenia prac na zapleczach sklepów, związanych z podziałem i przepakowaniem mięsa. Stąd też obserwuje się na rynku wzrost udziału opakowań Case-Ready, czyli opakowań małych porcji detalicznych, stosowanych m.in. w systemach pakowania próżniowego i z modyfikowaną atmosferą. Opakowania te w znacznym stopniu pozwalają przedłużyć trwałość produktu, co umożliwia wydłużenie czasu magazynowania, transportu oraz ekspozycji w ladach sklepowych. Dodatkową korzyścią dla producentów jest zwiększenie atrakcyjności produktu dla konsumentów poprzez zachowanie czerwonej barwy mięsa. Niektóre z opakowań mogą też zmniejszyć straty surowca w czasie przechowywania, wynikające z powstającego wycieku, przyczyniając się tym samym do zmniejszenia strat ekonomicznych.

Growing consumer requirements for fresh meat compel producers to use various packaging systems. The use of individual packages of meat is necessary because of the need to reduce the work in the back of the retail store, related to the cutting and meat repackaging. Because of that, the market of Case-Ready packaging is growing. Case-Ready can be used in vacuum and modified atmosphere packaging. These packages allow to prolong the shelf life of the meat, with longer storage and display time. An additional benefit for producers is increased attractiveness of the product for consumers by maintaining the red color. Packaging can also reduce the drip loss, thereby contributing to a reduction in economic losses.
Mięso wieprzowe odgrywa kluczową rolę na polskim, europejskim, jak i światowym rynku mięsa. W artykule scharakteryzowano zmiany wielkości produkcji trzody chlewnej, spożycia mięsa wieprzowego, a także jego eksportu i importu w latach 2000-2012. Na światowym rynku mięsa w roku 2012 wieprzowina zajmowała pierwsze miejsce pod względem wielkości produkcji (110,8 mln ton), natomiast w Polsce plasowała się na drugim miejscu – za mięsem drobiowym (2,2 mln ton). W analizowanym okresie wieprzowina była najchętniej spożywana wśród wszystkich gatunków mięsa, a jej spożycie utrzymywało się na stabilnym poziomie i wynosiło w 2000 roku 39,2 kg/osobę, a w 2012 roku – 39,0 kg/osobę. W 2012 r. znaczący popyt zagraniczny na mięso wieprzowe przyczynił się do wzrostu jego eksportu z Polski. W roku tym eksport żywca, mięsa i jego przetworów wynosił 588,4 tys. ton i w porównaniu z rokiem poprzednim wzrósł o ok. 14,5%. Natomiast import zwiększył się w tym czasie o około 9,8 %.

Pork meat plays an important role in the Polish, European and global market. In the article volume of swines’ production, consumption of pork and also the data connected with export and import this kind of meat in 2000-2012 were characterized. In 2012 pork production occupied a dominant position in the global meat market (110,8 mln ton), in Poland pork production was just behind poultry (2,2 mln ton). In the analyzed period, the structure of pork consumption was relatively stable and in 2000 was 39,2 kg /person, and in 2012 39,0 kg/person. In 2012 the significant foreign demand on pork has contributed to the growth of exports of swine meat from Poland. In that year, exports of livestock, meat and meat products was 588,4 thousand tons and in comparison with the previous year increased by approximately 14,5%. Import has increased during this period by approximately 9,8%.
