Turystyka kulinarna jest jednym z najbardziej dynamicznie rozwijających się trendów podróży tematycznych na rynku usług turystycznych na całym świecie. Celem podjętych badań było określenie profilu turysty kulinarnego odwiedzającego Podhale, a także opisanie specyfiki kuchni podhalańskiej przez prezentację najpopularniejszych regionalnych dań wskazanych przez respondentów. Innym celem badań była próba oceny szlaków kulinarnych znajdujących się na terenie Podhala. W artykule wykazano, że Podhale ze względu na bogate i różnorodne dziedzictwo kulinarne stoi przed ogromną szansą rozwoju tej gałęzi turystyki. Region ten jest swego rodzaju „kopalnią” smaku, bogatą w różnorodne aromaty produktów i potraw przyrządzanych według staropolskich tradycyjnych receptur.

Culinary tourism is one of the most dynamically developing travel trends in thematic tourism market worldwide. The aim of this study was to determine the profile of culinary tourists visiting Podhale, as well as describe the specifics of the Podhale cuisine through the presentation of the most popular regional dishes mentioned by respondents. Using choices of respondents sought to verify the frequency and type of choices of culinary tourists in Podhale. Another assumed aim of the research was to evaluate the culinary trails located within the Podhale, as well as the recommendations of gastronomic facility enrolling in the cultivation of regional traditions. The article shows that the Podhale because of the rich and diverse culinary heritage, is facing a huge opportunity for development of this branch of tourism. This region is a kind of „mine” of flavor, rich in a variety of tastes of products and historical Polish dishes prepared according to traditional recipes.
