Opracowanie prezentuje narzędzie do pomiaru dojrzałości zarządzania bezpieczeństwem żywności. Zostało ono stworzone przez autorkę niniejszego tekstu na bazie siedmiu zasad zarządzania jakością, a następnie przetestowane przez grupę ekspercką, n=33. Praktyczna ocena narzędzia została zrealizowana na próbie 95 zakładów mleczarskich z terenu całej Polski. Przeprowadzone analizy statystyczne wykazały, że kwestionariusz jest trafny i rzetelny, co za tym idzie spełnia wymagania narzędzia do pomiaru dojrzałości zarządzania bezpieczeństwem żywności.

The paper presents a food safety management maturity measurement tool. It was created by the author of this paper on the basis of 7 quality management principles and later tested by the expert group of 33. The practical assessment of the tool was conducted on the sample of 95 milk processing establishments from all over Poland. The performed statistical analysis proved the tool to be valid and reliable, so to fulfill the requirements of a food safety management maturity measurement tool.
