Celem artykułu jest ukazanie możliwości wykorzystania metody refleksji strategicznej do oceny zaspokojenia potrzeb różnych segmentów rynku turystycznego. Zaprezentowano w nim elementy modyfikacji metody refleksji strategicznej konieczne do realizacji postawionego celu. Obok metodyki postępowania przedstawiono praktyczny przykład pokazujący techniczną stronę stosowania metody oraz, poprzez interpretację uzyskanych informacji, ich wartość dla oceny możliwości zaspokojenia potrzeb różnych segmentów turystów.

The aim of this study is to show the possibilities of using of the stages of strategic reflection method as an assessment of the elements of regional touristic product in terms of satisfying the needs revealed by different segments tourists. There are shown the necessary modifications to the implementation of this phase of the strategic reflection method, to be able to use it to achieve the stated objective. For exemplification of the technical side of this method, a constituent result of their research, was presented evaluating the elements of touristic product, for different segments of tourists.

Mianem dziedzictwa kulturowego określamy sumę dorobku społeczeństw, wytworzonego w procesie historycznego rozwoju i przekazywanego z pokolenia na pokolenie. Obejmuje ono zarówno elementy materialne, jak i niematerialne. Kuchnia stanowi istotny komponent drugiej grupy. Jest to wskaźnik bogactwa i różnorodności dziedzictwa kulinarnego. Nic więc dziwnego, że władze krajowe i samorządowe wraz z regionalnymi organizacjami turystycznymi tworzą inicjatywy mające na celu inwentaryzację miejscowych zasobów kulinarnych i ich zastosowania w promocji lokalnej produkcji na rynku żywnościowym, a także jako walor generujący ruch turystyczny. Dlatego warto zaobserwować, jak na poziomie lokalnym rozwija się turystyka nakierowana na zasoby dziedzictwa kulinarnego. Celem niniejszego artykułu jest przedstawienie opracowanego na podstawie studiów literaturowych modelu wykorzystania dziedzictwa kulinarnego w turystyce oraz analiza wykorzystania wybranych produktów tradycyjnych na Górnym Śląsku w ramach oferty turystycznej regionu.

The term cultural heritage refers to the body of the heritage of societies produced in the process of historical development, passed from one generation to another. Its scope includes both material and non-material elements. Cuisine constitutes an important component of the second group. It is an indicator of the richness and variety of culinary heritage. Therefore it is no wonder that the state and self‑government authorities along with regional tourism organisations create initiatives whose purpose is to create an inventory of the local culinary resources and their use to promote local production in the food market, also as a value which generates the movement of tourists. Therefore it is worthwhile to observe the extent to which tourism based on the resources of culinary heritage develops. The aim of the present work is to demonstrate the model of using culinary heritage in tourism, prepared on the basis of research in subject literature and the analysis of the use of selected traditional products in Upper Silesia within the framework of the tourism-related offer of the region.

Receipts from international tourism exceed nearly one billion dollars. Individual countries can and should extract as big benefits as it possible from it. Poland in a small degree make use of recources and location to exercise from tourism as one of possibilities of social and economical development and gives "field" to countries with smaller tourism potential.

Product of the city is one of the many products on market of places, but its special features are depend on local reality. Territorial specific necessitates keep in mind needs of inhabitants and their possibilities in create of municipalities. Using the city products for attract tourists can be good method to get money on local development. The Silesian district cities perceive their chance in this matter in offering their historical resources (buildings and spatial urban structure). Important group of clients their touristic products should be many consumers from big cities of Upper Silesia Agglomeration, which look for attractive forms of recreation in the neighbourhood.
