The article presents a dozen or so methods of quantifying amounts used in the oldest Polish culinary books. The material is based on the works published for the first time in the Monumenta Poloniae Culinaria series edited by Jerzy Dumanowski. Determining the quantity in the culinary discourse was associated not only with counting, using measures of volume and weight, but also with the use of human body parts, vessels, items treated as a standard to measure products, determining the mutual proportions of products, as well as subjective assessments of quantity resulting from observing the process of preparing dishes.

W artykule przedstawiono kilkanaście sposobów określania ilości stosowanych w najdawniejszych polskich książkach kulinarnych. Podstawę materiałową stanowią wykorzystane w tym celu po raz pierwszy dzieła wydane w serii Monumenta Poloniae Culinaria pod red. Jerzego Dumanowskiego. Określanie ilości wiązało się w dyskursie kulinarnym nie tylko z liczeniem, stosowaniem miar objętości i wagi, ale też z wykorzystaniem części ciała człowieka, naczyń, rzeczy traktowanych jako wzorzec, ustalaniem wzajemnych proporcji produktów, a także z subiektywnymi ocenami ilości wynikającymi z obserwowania procesu przygotowywania potraw.

The article analyzes the method of implementing the culinary discourse in advertising texts published in „Tygodnik Ilustrowany” in 1910–1927. The focus was primarily on analyzing those ads that annexed a specific genre for their needs: a recipe. Moreover, advertisements were described in which determinants of various genres and styles intertwined, especially those in which elements of culinary discourse were intertwined with lexical determinants of scientific discourse. The analysis of the lexis of old advertisements also made it possible to observe which cooking vocabulary, often present in material from over a hundred years ago, is already perceived as archaic from a modern perspective.

Dieta roślinna i zaangażowanie społeczne w praktykach dyskursywnych społeczności internetowych

The subject of the considerations undertaken in the article is the plant-based diet, the practice of which in the contemporary culture is strongly entangled in identity and world-view projects and actions to change social life and food culture. The author, using the method of virtual ethnography and discourse analysis, examines in detail the culinary discourse used for mutual communication of the supporters of the plant-based diet in the space of a Polish social networking site (Facebook). Such an analysis of the discourse serves to show the specificity of the modern plant-based diet, but also to show the involvement of the author’s interesting culinary practices in world-oriented pro-ecological, economic and political activities. Thus, the plant-based diet appears in the presented analysis in a detailed social and environmental context, preserving its culinary specificity and autonomy, but at the same time illustrating important processes of current cultural changes in Poland.

Przedmiotem rozważań podjętych w artykule jest dieta roślinna, której praktykowanie w kulturze współczesnej uwikłane jest silnie w projekty tożsamościowe i światopoglądowe oraz działania na rzecz zmian życia społecznego i kultury jedzenia. Autorka, wykorzystując metodę etnografii wirtualnej i analizę dyskursu, poddaje szczegółowej analizie dyskurs kulinarny, służący wzajemnej komunikacji zwolenników diety roślinnej w przestrzeni polskojęzycznego portalu społecznościowego (Facebook). Tego rodzaju analiza dyskursu służy pokazaniu specyfiki współczesnej diety roślinnej, ale także ukazaniu uwikłania interesujących autorkę praktyk kulinarnych w światopoglądowo zaangażowane działania proekologiczne, gospodarcze i polityczne. Dieta roślinna pojawia się zatem w przedstawionej analizie w szczegółowym kontekście społecznym i środowiskowym, zachowując swoją kulinarną specyfikę i autonomię, ale jednocześnie obrazując ważne procesy aktualnych przemian kulturowych w Polsce.
