The article shows the richness of field material which has been practically neglected in previous explorations. Due to the lack of relevant certificates in the available studies, the assumption was to present relatively extensive field documentation. The nature of the study combines lexicographic investigations with the presentation of the results of these explorations. The mentioned material was obtained in the years 2005–2020; these are reports from the inhabitants of various parts of Poland – mainly, however, from Greater Poland – with almost 70 research points. Contrary to the accepted view that colostrum is not used in traditional cooking, the presented material proves that this tradition is very alive in rural areas.

W artykule ukazane jest bogactwo materiału terenowego praktycznie w dotychczasowych eksploracjach pomijanego. Z racji braku stosownych poświadczeń w dostępnych opracowaniach założeniem było przedstawienie w miarę bogatej dokumentacji terenowej. Charakter opracowania łączy dociekania leksykograficzne z prezentacją rezultatów tychże eksploracji. Przywoływany materiał pozyskiwany był w latach 2005–2020; są to relacje pochodzące od mieszkańców różnych części Polski – głownie jednak Wielkopolski – punktów badawczych jest prawie 70. Wbrew przyjmowanemu poglądowi o braku wykorzystywania siary w tradycyjnej kuchni, przedstawiony materiał dowodzi bardzo żywej jej tradycji w środowisku wiejskim.

The aim of the article is to draw attention to the need of documenting the dialect lexicon. While Polish dialectology can boast of many publications, field studies continue to confirm that the documentation of dialect vocabulary is incomplete. In this article I have selected a few words from Southern Poland recorded in the villages of Bugaj and Sitnica to show how many dialect variants remain undocumented, not noted in the existing sources, or how their credentials are incomplete, especially in terms of their different meanings.

Celem artykułu jest zwrócenie uwagi na potrzebę dokumentowania leksyki gwarowej. Mimo iż polska dialektologia może poszczycić się wieloma opracowaniami, to jednak ciągle przekonujemy się podczas badań terenowych, że dokumentacja słownictwa gwarowego jest niepełna. W artykule na przykładzie wybranych wyrazów południowomałopolskich odnotowanych we wsiach Bugaj i Sitnica pokazuję, jak wiele jeszcze dialektyzmów jest nieudokumentowanych, nieodnotowanych w istniejących źródłach, albo też jak ich poświadczenia są niepełne, zwłaszcza w zakresie różnych ich znaczeń.

The aim of the analysis and description in this paper is to examine words of foreign provenance: ‘baja’, ‘katanka’ (ǁkatana) and ‘łoktuszka’ (ǁłoktusza), selected from two lexicographical sources: a regional Słownik gwary gorczańskiej (zagórzańskiej), containing vocabulary from the late nineteenth century and the twentieth century, and the nationwide Słownik gwar polskich, in which the lexical material comes mainly from the second half of the nineteenth century. The author analyses the development of the meaning of the aforesaid words in Polish dialects, concerning “Gorce’’ area and other dialect territories, over the course of two centuries. It shows what their semantic development in relation to the donor’s language and the semantic differences in different territories of the Polish dialect were: where did they function as semantic dialects, which ones were regional in nature – Lesser Poland, and which ones were nationwide lexical units.
