It was shown that the optimum system of management by activities of enterprises operated in food industry, especially in producing of meat products, should be based on use of international standards requirements ISO 9001, ISO 14001, ISO 22000 and OHSAS 18001, which norms should be observed in structure of the integrated quality management system. There were analyzed the factors that influence negatively on safety of meat foods and state of nature nearby the enterprise, and proposed methods of minimization their influence. The work carried out in analysis of provi-sions of listed the standards permitted to choose their articles recommended for inclusion in typical structure of the integrated system of management.

Przedmiotem opracowania jest aktualny problem stosowania substancji dodatkowych w produktach mięsnych. Przedstawiono zarys historyczny i cele stosowania substancji dodatkowych w żywności. Zwrócono uwagę na zmianę przepisów dotyczących dodatków. Zaprezentowano nowe rozporządzenia Komisji Europejskiej. Omówiono rozporządzenie Komisji (WE) nr 1129/2011 z dnia 11 listopada 2011 r. Przedstawiono unijny wykaz dodatków do żywności ze szczególnym uwzględnieniem kategorii „mięso”. Zwrócono uwagę na nowe pojęcia związane z tą kategorią oraz prace nad systemem kategorii żywności i przewodnikiem po kategoriach środków spożywczych, a także na program ponownej oceny dopuszczonych dodatków do żywności. Scharakteryzowano kategorie aktualnych substancji dodatkowych stosowanych w przetwórstwie mięsa. Przedstawiono racjonalne przesłanki do stosowania substancji dodatkowych we współczesnej technologii mięsa.

The aim of this study is to present current issues in the use of food additives in meat products. It provides a historical outline and objectives of the use of additives in foods, highlights changes in the legislation concerning additives, and discusses a new regulation of the European Commission – 1129/2011 of 11th November 2011. The article lists the food additives approved by European Union authorities with particular attention to the “meat category”, and characterises current categories of food additives used in meat processing. It highlights new concepts in this category and the work on a food category system and a guide to the categories of food, as well as to the re-evaluation programme of the approved food additives. The paper presents the rationale for the use of food additives in modern meat technology.

The diet high in meat products may be one of the reasons of inflammatory bowel diseases. Simultaneously, the meat consumption in this group of patients is in many cases high, however it may possibly have negative impact on the symptoms of disease. On the other hand, meat functional products may have a positive influence on health and well-being of people with inflammatory bowel diseases. Important may be especially meat and meat products characterized by reduced alergenicity, reduced preservatives content, modified fatty acids composition, with probiotics, antioxidants, that may be applied in case of people with inflammatory bowel diseases instead of typical products. They may allow to enhance intake of deficit nutrients and to eliminate components of adverse effect.
