The paper presents preliminary results of an analysis of 51 samples of plant macrofossils coming from various archaeological contexts from the site of Tell Arbid in Northeast Syria. The contexts were dated mainly to the 3rd millennium BC (EJI–EJV) with a few being of 2nd millennium BC date (Khabur Ware and Mitanni periods). Cultivated plants were represented by cereals and pulses. The cultivation of at least three cereal species is documented, including a hulled variety of two-rowed barley, glumed einkorn and/or emmer wheat, and a species of naked wheat, probably macaroni wheat. Vegetables included lentil, bitter vetch, grass pea, and garden pea. Plants from the Ninevite 5 period (EJI–EJII) and their significance in the Tell Arbid economy are discussed in greater detail owing to the highest number of samples studied.

Model zrównoważonej konsumpcji żywności, opracowany przez takie organizacje, jak FAO, WHO i WWF1, zakłada zwiększony udział produktów pochodzenia roślinnego w codziennym żywieniu. Wskazywana do pilnego rozpowszechniania struktura spożycia żywności wynika z wpływu, jaki ma nadmierna konsumpcja i przemysłowa produkcja – w szczególności produktów pochodzenia zwierzęcego – na środowisko naturalne, w tym klimat. W modelu podkreśla się konieczność zwiększenia spożycia nasion roślin strączkowych, które stanowią bogate i tanie źródło białka. Według badań budżetów gospodarstw domowych GUS, w Polsce spożycie tych produktów wynosi 0,9 kg/rok/osobę. Wyniki badań ankietowych zrealizowanych wśród studentów wskazują, że główną determinantą wyboru spożycia nasion roślin strączkowych jest ich smak, a produkt jest oceniany jako dostępny i tani. Poznanie walorów zdrowotnych, a także zdobycie wiedzy nt. organiczonych zasobów naturalnych mogłyby zmotywować młodych konsumentów do większego wykorzystania nasion roślin strączkowych w codziennej diecie.

The sustaintable food consumption model, developed by such organisations as FAO, WHO and WWF assumes an increased share of products of plant origin in everyday nutrition. It is essential to promote new consumption patterns due to the impact that overconsumption and industrial production, especially of animal products has on the natural environment, including climate. The model points out an urgent need to increase the consumption of pulses – rich and affordable source of protein. In Poland their intake is very low, according to GUS household budget data – 0,9 kg/capita/year. Results of a study conducted among students shows that the consumption of pulses is mainly determined by taste and the product is seen as an available and cheap. It is important for young people to gain knowledge about the nutritional value and beneficial influence of pulses on the environment in order for them to become more motivated to choose to eat pulses every day.
