The development of the food service market undoubtedly is related to the social and economic changes taking place in recent years in our country. Once the industrial economy has turned into knowledge-based economy there are not only material assets but also intellectual resources that decide whether a company is able to earn and maintain competitive advantages or not.

Celem opracowania było określenie czynników wpływających na podejmowanie przez konsumentów decyzji nabywczych na rynku gastronomicznym. W pracy przedstawione zostały główne powody, jakimi kierują się nabywcy podczas wyboru lokalu gastronomicznego, ich preferencje dotyczące lokalizacji oraz rodzaju kuchni. Opracowanie przedstawia również teorie zachowania konsumenta, czynniki wpływające na zachowania nabywcy i procesy, jakie towarzyszą podejmowaniu decyzji. Zobrazowany został również rynek gastronomiczny w Polsce oraz czynniki wpływające na zmiany popytu na usługi tegoż rynku.

The purpose of the work was to determine the factors affecting consumers’ purchasing decisions on the gastronomy market. It was indicated that preferences regarding the location, type of kitchen and the purpose of the most frequent catering places. The thesis also presents theories of consumer behavior, factors affecting the behavior of the buyer and the processes that accompany the decision-making process. It is illustrated that the gastronomic market in Poland and factors influencing changes in the demand for services on this market.
