Celem opracowania jest przedstawienie pracy baristy we współczesnych kawiarniach i innych lokalach gastronomicznych, głównie typu uzupełniającego, prowadzących działalność na rynku HoReCa w Polsce. W artykule przedstawiono rynek kawiarniany i kawowy w Polsce. Dokonano charakterystyki zawodu baristy oraz specyfiki jego pracy w lokalu gastronomicznym typu uzupełniającego. Opisano techniki i metody parzenia kawy przez profesjonalnych baristów. Zestawiono typy kaw oraz napojów kawowych przyrządzanych i serwowanych przez baristę w kawiarniach, jak również w innych lokalach gastronomicznych, zatrudniających profesjonalnego pracownika.

The aim of the study is to present the work of a barista in contemporary cafes and other gastronomic premises, mainly of a complementary type, operating on the HoReCa market in Poland. The coffee and cafeteria market in Poland is shown in this article . Characteristic of the barista’s profession and the specifics of his work in a gastronomic type of complementary type were made. Coffee techniques and methods have been described by professional baristas. The types of coffee and coffee drinks prepared and served by the barista in cafes and other gastronomic premises employing a professional employee are listed.
