The structural transformations occurring in the Polish dairy industry, to a large extent, arise from the processes of its adaptation to the uniform EU market conditions. The thorough modernization of milk production and processing technologies has enabled the producers to achieve a considerable improvement of the quality of dairy products, which alongside the cost and price advantage of Polish dairy producers is an important contributor to the competitiveness in the EU market. The purpose of this study has been to make an assessment of the prospects for further growth in the competitiveness of the Polish dairy industry in international markets. The dairy industry in Poland was compared to selected EU countries with regards to the quality of raw material supplies, the worth and structure of the production of dairy products, labour efficiency, and production concentration. The study showed that any further growth in the export of Polish dairy products will require more intensive promotional campaigns, so that European consumers would be able to identify Poland with a greater array of dairy products.

The important factors influencing milk enterprises competitiveness involve: labor market local conditionings including labor force resources' size and their changes direction, inhabitants demographic structure, unemployment rate as well as education and professional qualifications level. They have great impact on labor cost level as well as on the level of labor effectiveness and productiveness. Survey shows that Lublin region's de-population, low level of country inhabitants share in Lublin region total population as well as inhabitants aging negatively influences competitiveness ex ante of surveyed entities. Apart from showed suitable labor factor quality, the level of labor effectiveness was identified low what hampered potential use of competitive advantage resulting from less than average labor cost. Above mentioned can result from over-employment in some surveyed entities connected with difficulties with labor factor management. Associated with above difficulties there is potential relation between regional labor conditions - accessibility, quality and price implicating and milk enterprises competitiveness. There is a necessity to rise the labor effectiveness to maintain or increase the competitiveness of milk factories in Lublin region.

W artykule przedstawiono ocenę poziomu rozwoju sektora mleczarskiego i jego bazy surowcowej oraz przetwórstwa mleka w przekroju województw. Do pomiaru poziomu rozwoju sektora wykorzystano miernik syntetyczny, wyznaczony za pomocą metody TOPSIS. Przeprowadzona analiza wykazała znaczne zróżnicowanie przestrzenne stanu bazy surowcowej potrzebnej do produkcji mleka i jego przetwórstwa. Najwyższy poziom rozwoju sektora mleczarskiego osiągnęły województwa położone w rejonach północno-wschodniej Polski — podlaskie, warmińsko-mazurskie i mazowieckie — gdzie występują sprzyjające warunki przyrodnicze i strukturalne do produkcji mleka. Z kolei zbyt niską pozycję sektora mleczarskiego zaobserwowano w województwach położonych w rejonie północnozachodnim (pomorskie, zachodniopomorskie, lubuskie, dolnośląskie), cechujących się korzystnymi warunkami strukturalnymi do produkcji mleka. W województwach południowowschodniej Polski główną przeszkodą w znaczących przemianach w zakresie rozwoju mleczarstwa jest rozdrobniona struktura własności i władania ziemią rolniczą. The estimation of dairy sector development level, its raw materials base and milk processing in voivodship profiles were presented in the article. A synthetic measurement using the TOPSIS method was applied to measure the level of the sector development. The carried out analysis demonstrated considerable area diversity in the raw materials base needed for milk production and processing. The highest development of dairy sector level achieved voivodships located in the north-east part of Poland (Podlaskie, Warmińsko-Mazurskie, Mazowieckie) where favourable natural and structural conditions for milk production occur. Too low position of the dairy sector was observed in the north-west part of Poland (Pomorskie, Zachodniopomorskie, Lubuskie, Dolnośląskie) which is characterized by favourable structural conditions for milk production. The fragmented structure of ownership and utilisation of cultivated land in south-east voivodships are the main obstacles in significant transformation in the dairy sector development. Problemem naukowym niniejszego artykułu jest zapełnienie luki w asortymencie spożywczym. Kożuch powstały z mleka znają konsumenci z wcześniejszych lat i jest to produkt wzbudzający skrajne emocje wśród społeczeństwa. W dzisiejszych czasach na rynku jest "wszystko" i wymyślenie całkowicie nowej rzeczy, której nie ma i nie było jeszcze w sprzedaży, jest bardzo trudne. Celem artykułu jest propozycja dla przedsiębiorstw mleczarskich, wyprodukowania tego kontrowersyjnego produktu w formie deseru mlecznego. W artykule jest przeprowadzony wywiad z konsumentami sklepu spożywczego na temat ich decyzji zakupowych na skutek ewentualnego wprowadzenia na rynek produktu powszechnie znanego, lecz do tej pory nieprodukowanego na skalę masową.(fragment tekstu)

The article describes the behavior of buyers and their purchasing needs. The author of the article, introduces a new product, which proposes to introduce into production and thereby to sell. The introduction of an entirely new consumer product on the market is very difficult and rare. A good way to get to know the opinion of the crowd with an innovative product for manufacturing companies is crowdsourcing, which can be used as a marketing study. With the introduction of a new product on the market, it is also important to educate consumers about purchasing needs and shaping their subsequent decision.(original abstract)
