The purpose of this article is the attempt to assess the quality of natural products based on the example of honey. The quality of products produced by man is judged primarily in terms of technical quality of the product describing the agreement between parameters established by the man, and their implementation in the final product. In this paper the authors, using the results of research on physical and chemical properties, have made a comparative assessment of the quality of honey. Using different methods of linear ordering of objects, the authors have built quality rankings.
