Mniejszości etniczne we współczesnej turystyce kulturowej stanowią o dużej atrakcyjności turystycznej wielu regionów na terenie Polski. Najbogatsze pod tym względem są obszary przygraniczne, które znajdują się na wschodzie naszego kraju, gdzie szczególne miejsce pośród nich zajmuje wielokulturowe Podlasie. Region ten jest kolebką Tatarów polskich, którzy stanowią małą mniejszość etniczną. Kultywują oni tradycje i zwyczaje, które wytworzyły się przez 600 lat, a zwłaszcza z wielką pieczołowitością pielęgnują oni swoje charakterystyczne zwyczaje żywieniowe. Celem opracowania jest przedstawienie kuchni tatarskiej jako atrakcji turystycznej Podlasia, która stanowi ważny element oferty turystycznej na obszarach wiejskich. Najpierw ukazano dziedzictwo kulturowe mniejszości tatarskiej na Podlasiu. Następnie dokonano charakterystyki tatarskich tradycji kulinarnych w badanym regionie, po czym zaprezentowano wykorzystanie kuchni tatarskiej w wiejskiej turystyce kulturowej na wybranych przykładach.

Poland since the beginning of its statehood was a multicultural and multi-religious country. Existing until the eighteenth century Polish-Lithuanian Republic was inhabited by people of different origins, thus combining elements of Eastern and Western traditions. Currently in Poland national and ethnic minorities account for a few percent of the population of the country. One of the ethnic groups represented by the Tatars, who are distinguished by a separate origin, culture and religion. In the majority live in the Podlasie region, where are located two historic mosques – in Bohoniki and Kruszyniany addition to religion, the most important sectors Tatar cultural heritage are cooking. They are connected with ancient traditions and eating habits Tartars. The aim of the article is to show Tatar cuisine as a tourist destination Podlasie, which is an important element of tourism in rural areas.
