Przedmiotem analizy jest zagadnienie bezpieczeństwa w produkcji żywności w przedsiębiorstwach branży piekarniczo-cukierniczej. Punktem wyjścia rozważań była próba zdefiniowania jakości żywności jako pojęcia szerszego aniżeli samo bezpieczeństwo zdrowotne. Ogólnej analizie poddano systemy zapewniające bezpieczeństwo zdrowotne żywności w przedsiębiorstwach produkcyjnych branży piekarniczo-cukierniczej tj. systemy GMP/GHP i HACCP. Wskazano na ideę systemu HACCP w przedsiębiorstwach produkcyjnych, problemy oraz korzyści wynikające z jego wdrożenia.

The analysis covers the food production safety in companies from the baking and confectionery industry. The starting point for the discussion was an attempt to define food quality as a broader concept than just its safety for health. Systems ensuring food safety for health in baking and confectionary plants, i.e. GMP/GHP and HACCP, have been generally analysed. The idea of using HACCP system in production plants was highlighted, as well as the problems and the benefits from implementing thereof.
