Rynek produktów żywnościowych to miejsce gruntownych przemian, które z jednej strony dostrzegane są w zachowaniach konsumentów odzwierciedlonych przez: wyraźną stabilizację poziomu spożycia wielu podstawowych artykułów, wzrost spożycia nowych kategorii produktów (żywność wygodna czy funkcjonalna) oraz wyraźny trend wzrostu znaczenia jakości spożywanych produktów żywnościowych. Z drugiej strony przemiany uwidoczniły się w innowacyjności produktowej i marketingowej uczestników strony podażowej rynku w formie rozszerzenia i pogłębienia oferty rynkowej adresowanej do różnych grup konsumentów oraz dynamicznego rozwoju różnych form dystrybucji. W rezultacie celem jest nie tylko zaspokojenie bieżących oczekiwań i potrzeb żywnościowych uczestników rynku, ale również poszukiwanie nowych możliwości i perspektyw rozwoju rynku i aktywności jego uczestników.

The market for food products is a place of radical changes, which, on the one hand, can be seen in consumer's behaviour reflected by a clear stabilisation of the level of consumption of many basic articles, growth of consumption of new categories of products (convenient or functional foods) and a clear trend of growth of the importance of quality of food products being consumed. On the other hand, the changes are seen in product and marketing innovativeness of participants of the supply side of the market in the form of extension and deepening of the market offer addressed to various groups of consumers and the dynamic development of various forms of distribution. In result, the objective is not only satisfaction of the current food expectations and needs of the market players but also seek for new opportunities and perspectives of development of the market and activity of its players.
