The article is a presentation of spring rituals associated with animals in the Polish countryside, recorded by ethnographers up to the beginning of the twentieth century. In traditional Polish rural society, rituals associated with the Slavs beliefs and symbolism, which were to symbolically start the new vegetative year, were among the most important activities of worship ‑ the choice of animals for the ritual. These beliefs were so firmly embedded in the consciousness of the traditional communities that survived until the early twentieth century in the form of customs and the way of how animals were treated by the hosts. The relationship of man with the animal was very characteristic of the rural community, as it was associated with the supplementation of the basic needs of the host, which translated into a concern for the animals’ health and their lives. In the opinion of the former inhabitants of the village, caring for the animals apparently manifested in the practice of magic that was to prevent and ward off spells and diseases.
The problem of revival is considered and the current state of development of animal husbandry in Ukraine is investigated. The research is based on the use of state information resources and generalization of scientific developments of domestic and foreign scientists. The changes in the number of farm animals, the volume of livestock production and improving its economic efficiency are analyzed. It is established that the process of revival should be accompanied by the effective use of own financial resources and ensure the sustainable development of all sub-sectors of animal husbandry. To ensure the implementation of effective measures for the revival, stabilization and development of animal husbandry is possible through the effective use of all types of production resources, in particular the genetic potential of animals, the introduction of innovative technologies and economic levers that contribute to the profitability of animal husbandry. The main factors that directly affect the potential of livestock and poultry and increase its productivity are identified. The necessity of creation of the state special fund for revival and support of animal husbandry is specified and the directions of increase of its effective development are offered.
Ważną rolę w agroturystyce pełnią zwierzęta gospodarskie, które stanowią jeden z elementów rdzenia produktu agroturystycznego. Pośród wielu gatunków i ras zwierząt w gospodarstwach agroturystycznych występują też stare rasy zachowawcze, które objęte są programem ochrony zasobów genetycznych. Celem pracy jest zaprezentowanie udziału zwierząt gospodarskich ras zachowawczych w gospodarstwach agroturystycznych „Góralskiego Stowarzyszenia Agroturystycznego”. Badaniami objęto wszystkie gospodarstwa agroturystyczne należące do „Góralskiego Stowarzyszenia Agroturystycznego” zlokalizowane w wybranych gminach województwa małopolskiego. Pośród nich 52% gospodarstw agroturystycznych deklarowało utrzymanie zwierząt gospodarskich ras zachowawczych. Badania wykazały, że spośród zwierząt gospodarskich ras zachowawczych utrzymywanych w gospodarstwach agroturystycznych „Góralskiego Stowarzyszenia Agroturystycznego” największy udział stada stanowiły owce (47%). Porównywalny był udział procentowy bydła i kóz stanowiąc odpowiednio 20 % i 21% oraz wyraźnie niski był udział koni (7%) oraz świń (zaledwie 5%). Argumentami przemawiającymi za wyborem tych ras zwierząt jest nie tylko ich doskonałe przystosowanie do lokalnych warunków klimatycznych i paszowych, ale też duża ich zdrowotność i długowieczność.

Livestock plays an important role in agritourism, which is one of the core elements of an agritourism product. Among many breeds of animals on agritourism farms there are also old regional breeds that are covered by the genetic resources conservation program. The purpose of the work is to present the share of farm animals of conservative breeds on agroturism farms of the “Highlander Agrotourism Association”. The research covered all agritourism farms belonging to the “Highlander Agrotourism Association” of farms located in selected voivodship of Małopolska. Among them 52% of agritourism farms declared keeping farm animals of conservative breeds. Studies have shown that sheep accounted for the largest share o conservation breed animals on the agroturism farm of this association. Based on the answered obtained from questionnaires of the survey carried out at agritourism farms, it was found that the largest percentage of large farmed animals were 47%. The percentage share of cattle and goats was comparable, constituting 20% and 21% respectively. The arguments for choosing these animals breeds are not only their excellent adaptation to local climate and feed conditions but also their high health and longevity.
The article deals with the peculiarities of legal regulation of handling of farm animals during slaughter. On the basis of the analysis of Ukrainian legislation and international legislation, the requirements for the transportation of animals have been determined, taking into account their biological, species and individual characteristics, as well as the primary processing of animals and products obtained by slaughter. In the article particular attention is paid to the subject composition of the studied legal relations, the problems of applying humane methods of slaughter of farm animals and certain issues of legal responsibility in the sphere of handling animals during slaughter in Ukraine. The state of development of slaughter economy of producers of agrarian sector of Ukraine was studied. An estimation of the current state of functioning of slaughter points in Ukraine was carried out. Based on the generalization of the world and domestic experience, the directions of their development were proposed as a component of the market infrastructure. The conclusion was made about the need for the development of slaughter stations as an alternative to home slaughter of livestock intended for sale. The advantages and disadvantages of the prohibition of selling meat from home slaughter of livestock were analyzed. The ways of improving the system of state control in the field of food safety were proposed taking into account the requirements of the European Union and the socio-economic situation in Ukraine.

W artykule została opisana specyfia regulacji prawnych dotyczących postępowania ze zwierzętami gospodarskimi podczas uboju. Po przeprowadzeniu analizy prawodawstwa ukraińskiego i międzynarodowego określono także wymagania dotyczące transportu żywych zwierząt, co w każdym przypadku musi przebiegać z uwzględnieniem ich biologicznych, gatunkowych i indywidualnych cech. Ponadto przybliżono problemy związane z zastosowaniem humanitarnych metod uboju zwierząt gospodarskich, wymagania w zakresie pierwotnego przetwarzania zwierząt i produktów uzyskanych w wyniku uboju oraz niektóre kwestie dotyczące odpowiedzialności prawnej z tytułu niewłaściwego traktowania zwierząt przeznaczonych do uboju. Opracowanie zawiera również ocenę obecnego stanu funkcjonowania punktów uboju na ukrainie. Na podstawie doświadczeń krajowych i międzynarodowych zaproponowano kierunki rozwoju punktów uboju (ubój przemysłowy) jako elementu infrastruktury rynkowej. Na tle podjętych rozważań sformułowano wnioski dotyczące potrzeby rozwoju punktów uboju jako alternatywy uboju domowego (uboju gospodarczego) w celu pozyskania mięsa do sprzedaży. W artykule przeanalizowano też wady i zalety zakazu sprzedaży mięsa po uboju domowym oraz zaproponowano sposoby poprawy systemu kontroli państwowej w zakresie bezpieczeństwa produktów spożywczych z uwzględnieniem prawa UE i sytuacji społeczno-gospodarczej na Ukrainie.
The article is devoted to an outstanding scientist in zootechnics P.D. Pshenichny, disclosing his life journey and scientific accomplishments. He was a highly educated scientist, investigative experimenter, is closely associated with the production, farm workers, was an example of true national scholar and active public figure.
Предметом анализа являются условия жизни сельскохозяйственных животных в животноводстве в Польской Народной Республике, а также их отражение в тогдашнем животноводческом и зоотехническом дискурсе. Цель статьи – показать, какими были передовые методы животноводства до того, как понятие благополучие стало популярным, и как тогда понимался правильный уход за сельскохозяйственными животными. Автор утверждает, что эволюция практики животноводства повлекла за собой изменения в животноводческом дискурсе, и особенно в риторике, используемой для описания живых существ, не принадлежащих к человеческому роду, и их отношений с людьми. В то же время автор пытается отметить поворотные моменты, связанные с дискурсивными сдвигами, которые сформировали более поздние методы разведения.

The subject of this analysis is what the life conditions of farm animals in the Polish People’s Republic looked like and how they were reflected in professional discourse. My main aim is to show how good practices in husbandry were understood before the rise of the notion of animal welfare. As I demonstrate, their evolution was strictly linked with rhetorical changes in the discourse. I delineate the main material-discursive historical shifts that shaped further breeding practices.

Przedmiotem niniejszej analizy są warunki bytowania zwierząt w hodowli wielkostadnej w czasach PRL oraz to, jakie odbicie znajdowały one w ówczesnym dyskursie hodowlanym i zootechnicznym. Moim celem jest zrozumienie, czym były tak zwane dobre praktyki w hodowli przed upowszechnieniem się pojęcia dobrostanu i jak rozumiano wówczas właściwą opieką nad zwierzętami gospodarskimi. Dowodzę, że ewolucja praktyk hodowli pociągała za sobą zmiany w dyskursie hodowlanym, a zwłaszcza w retoryce stosowanej do opisu nie-ludzkich zwierząt i ich relacji z ludźmi. Próbuję zarazem wyznaczyć czasowe cezury definiujące przesunięcia dyskursywne, które ukształtowały późniejsze praktyki hodowlane. Artykuł pozwala ukazać warunki życia zwierząt gospodarskich w tamtej epoce, ale także „wejść w głowy” ludzi zajmujących się, bezpośrednio lub pośrednio, tworzeniem i nadzorowaniem ich dobrostanu. Uchwycenie, co rozumieli oni pod pojęciem dobrej opieki nad zwierzętami wydaje się fundamentalne dla prześledzenia zmian, jakie zaszły w opisywaniu relacji między ludźmi a zwierzętami hodowlanymi w czasie ostatnich 70 lat.
