Nowe preferencje konsumentów dotyczące wyboru żywności w dużym stopniu są uzależnione od rozwoju postępu technologicznego w przetwórstwie spożywczym. Wynika to ze wzrostu świadomości zdrowotnej społeczeństwa. Współczesne doniesienia akcentują prozdrowotne znaczenie żywności funkcjonalnej, dostarczając coraz to nowych informacji o zakresie pozytywnych jej oddziaływań na funkcjonowanie organizmu człowieka. W niniejszej pracy przedstawiony został krótki rys historyczny rozwoju rynku żywności funkcjonalnej oraz jego obecny stan. Podane są definicje i możliwe klasyfikacje tych produktów. Przedstawiono również ogólną charakterystykę żywności funkcjonalnej pod kątem występowania w niej aktywnych składników. Ważność składników i ich istotny wpływ na stan zdrowia stwarza wymagania dostarczenia konsumentom dokładnej informacji nie tylko o składzie chemicznym produktów, ale również o wpływie składników bioaktywnych na określone dolegliwości zdrowotne. Obowiązują w tym zakresie rygorystyczne regulacje prawne.

New consumer’s preferences concerning food depend to a large extent on the development and technological progress in the food industry. It is associated with an increase in the sense of health awareness of the society. Contemporary reports emphasize the importance of food and pro-health functions in functional food. Through delivering the new informations on range of positive influence on functionality of human body. In this paper short history of functional food market and its contemporary position is shown. Basic definitions and classification of bioactive products are also presented. The aim of the work was to characterize functional food in terms of division and legal regulations, with elements of active ingredients and their functions. The importance of biocomponents requires to deliver to the consumer exact information not only on their chemical composition but also on influence of components on particular kind of disease. Basic food law regulation in this respect are also given.
