The predominant form of agriculture in some regions of Poland today includes the use of relatively high levels of chemicals. This carries significant economic advantages but also takes its toll on the natural environment and the health of consumers alike. Owing to both technological and scientific progress it is now common knowledge that many chemical compounds and technologies acknowledged in the past as “safe” and “harmless” are bad for human health and the environment. Research on chloroorganic pesticides residues in foodstuffs, especially in products that constitute the basis of the everyday diet such as cereals and cereal products, is therefore being done. The main aim of the paper is to systematise the knowledge on the most important chloro-organic pesticide residues found in food. The paper presents and discusses the results of research conducted in 2005–2006 on the content of these compounds in different types of flour and bakery products available on the local market in southeast Poland.
