W pracy przedstawiono wybrane inicjatywy rekonstrukcji kulinarnej na przykładzie działalności dolnośląskich zamków w zakresie “gastronomii retro”. Analizowanymi projektami są: Festiwal Kuchni Historycznej – Twierdza Smaków organizowany w zamku Czocha oraz kolacja degustacyjna nawiązująca do kuchni Hochbergów zrealizowana w zamku Książ. Opisano źródła informacji o kuchni historycznej i sposobach jej rekonstrukcji. Dokonano charakterystyki dwóch wytypowanych do badania zamków dolnośląskich przystosowanych do celów turystycznych. Przedstawiono inicjatywy związane z rekonstrukcją kuchni historycznej w badanych zamkach na Dolnym Śląsku.

The study presents selected initiatives of culinary reconstruction on the example of the activity of Lower Silesian castles in the retro gastronomy. The analyzed projects are: Historical Cuisine Festival – Fortrees of Tastes, organized in the Czocha castle and a tasting dinner referring to the Hochberg cuisine, realized in the Książ castle. The sources of information about historical cuisine and its reconstruction are described. Characteristics of selected the Lower Silesia castles adapted for tourism purposes were selected, which were selected for the study. The initiatives related to the reconstruction of historical cuisine in the studied castles in the Lower Silesia have been presented.
