W pracy badano wpływ dodatku mąki z żołędzi na wybrane właściwości fizyczne bezglutenowego pieczywa ryżowego otrzymanego metodą ekstruzji. Badano gęstość oraz porowatość pieczywa, określono właściwości mechaniczne i akustyczne podczas testu penetracji. Wykazano, że dodatek mąki z żołędzi pogarszał współczynnik ekspandowania, powodował wzrost gęstości pozornej oraz niewielki spadek porowatości, ale nie wpływało to na twardość materiału określoną za pomocą siły maksymalnej. Badania aktywności akustycznej wykazały, że obie badane próby pieczywa cechowały się znaczną chrupkością. Dodatek mąki z żołędzi nie miał wpływu na amplitudę i czas trwania dźwięku, ale powodował istotny statystycznie wzrost liczby zdarzeń akustycznych, co zostało zarejestrowane zarówno metodą kontaktowa, jak i mikrofonową. Stwierdzono, że dodatek mąki z żołędzi poza poprawą walorów żywieniowych, miał również korzystny wpływ na teksturę pieczywa ryżowego.

The effect of acorn flour additon on the selected physical properties of gluten-free bread was investigated. The density and porosity of bread were tested as well as the mechanical and acoustic properties during pentration test were determined. It was shown that addition of acorn flour deteriorated the expansion index, caused an increase in apparent Ewa Gondek, Dorota Nowak, Ewa Jakubczyk, Anna Kamińska-Dwórznicka… density and a slight decrease in porosity. This addition did not affect hardness of material determined by maximal force. The measurement of acoustic activity showed that the investigated samples of bread were characterised by the considerable crispness. The addition of acorn flour did not affect the amplitude and duration of acoustic emission event but it led to a statistically significant increase of number of acoustic events which was registered using the contact as well as microphone method.

The aim of this study is to present how the development of writing technology influences writing itself. In this paper the analysis is focused on mechanisms of reinterpretation of writing and reading in digital space, in other words, the change in experience of text. To summarize, modern media techniques make reading become writing, when writing becomes clicking (an action taken upon the texture), and clicking becomes the experience of text. Another goal is to present a special role of the texture as the tool of text’s creation as well as the place of cohesion. The importance of semiotic tissue of digital text, especially in the case of digital art, is visible in the formation of intratextual relations. These relations are created in the process of working one element of texture onto another, which allow them to play an important role in the creation of textual meaning.

This article is devoted to my own Lenten choral and organ music. At first, I introduce my motives for undertaking creative activity, which include, among others, the atmosphere of my family house (my father, Wojciech Łukaszewski, was a composer). My inspiration to take up choral music was a ten-year collaboration with the choir of the Academy of Catholic Theology (currently Cardinal Stefan Wyszyński University in Warsaw) under the management of the Reverend Kazimierz Szymonik. In the latter part of the article, I introduce my choral works, list the titles and then focus strictly on Passion and Paschal music. I present the circumstances in which those pieces were created, the details of their first performances and recordings, the texts they used and, furthermore, analyze them, paying attention to the most distinctive features of my composing technique and style.

Artykuł jest poświęcony własnej muzyce chóralnej i organowej o tematyce wielkopostnej. Na początku przybliżam motywy podjęcia przeze mnie działalności twórczej, na co m.in. miała wpływ atmosfera domu rodzinnego (ojciec, Wojciech Łukaszewski, był kompozytorem). Inspiracją do podjęcia muzyki chóralnej była natomiast dziesięcioletnia współpraca z chórem Akademii Teologii Katolickiej (obecnie UKSW) w Warszawie pod dyrekcją ks. Kazimierza Szymonika. W dalszej części artykułu przybliżam twórczość chóralną, wymieniam tytuły utworów, a następnie koncentruję się na utworach już stricte o tematyce pasyjnej i paschalnej. Przybliżam okoliczności ich powstania, informacje o prawykonaniach, nagraniach, wykorzystanych tekstach, a następnie przeprowadzam krótkie analizy, zwracając uwagę na najbardziej charakterystyczne cechy mojej techniki kompozytorskiej i stylistyki.

Marek Hendrykowski’s study is concerned with the close-reading analysis and interpretation of the Autobus (1955–1961) oil on canvas painted by Bronisław Wojciech Linke. This masterpiece of Polish peinture of the 1950s is deeply related to history and conditions of human life in Poland and other East European countries after World War II where everyday life is based on ideology imposed on society. Linke’s peinture gives emblematic ironic image of it created as an anti-social realist protest based on paradigm of Polish culture and art of the period.

The article reflects on the text-based issues connected with producing chosen written forms in Polish as a foreign language classroom. It discusses the structure of a composition describing one’s friend written by students who learn Polish in the School of Polish for Foreigners at the University of Lodz. The article shows the global structure of these forms, their division, text delimitation and the use of metatext. It also analyses the degree of students’ mastery of the new composition skills that had been acquired in writing classes. It gives some examples of exercises, which are useful in teaching the structure of the descriptive essay about a person.

Artykuł podejmuje pewne zagadnienia tekstowe związane z produkcją form pisemnych na lekcjach języka polskiego jako obcego. Jest próbą analizy kompozycji charakterystyk przyjaciela pisanych przez słuchaczy Studium Języka Polskiego dla Cudzoziemców UŁ. Ukazuje globalną strukturę tych prac, ich podziały formalne, delimitację tekstu oraz użycie wypowiedzi metatekstowych. Bada ponadto stopień opanowania przez studentów treści nauczania, które nabyli podczas zajęć omawiających technikę pisania charakterystyki bezpośredniej. Podaje przykłady ćwiczeń dydaktycznych przydatnych cudzoziemcom w prawidłowej realizacji wzorca omawianej formy pisemnej.
