In Poland, about 70 percent of an average consumer’s diet is composed of industrially processed food that contains additives: preservatives, filling additives, emulsifiers, stabilisers and flavour enhancers. At present, over 330 additives are permitted to be used in food, having 27 various technological functions. The subject of NIK’s audit, which covered the whole country, was to examine the activities of the inspectorates responsible for the health and commercial quality of food products. The objective was to assess whether the system of supervision of the use of additives in food provided for the required quality of marketed food and the safety of consumers’ health. The audit covered the scope of the supervision and the effectiveness of the cooperation among the audited entities.
