Celem badania było zdiagnozowanie opinii konsumentów nt. znaczenia błonnika w diecie oraz ocena wybranych produktów zbożowych o podwyższonej zawartości błonnika. Badanie empiryczne przeprowadzono z wykorzystaniem autorskiego kwestionariusza, za pomocą metody wywiadów bezpośrednich ze wspomaganiem komputerowym (CAPI) w październiku 2014 roku w grupie ogólnopolskiej 1013 dorosłych konsumentów. Relatywnie więcej kobiet, osób młodszych, z wyższym poziomem wykształcenia, zamieszkujących większe miasta oraz respondentów deklarujących zakup nowego produktu żywnościowego uważało, że należy kontrolować ilość spożywanego błonnika. Odnotowano również, że relatywnie więcej kobiet, osób młodszych, legitymujących się wyższym poziomem wykształcenia, zamieszkujących większe miasta oraz osób deklarujących, iż kupują nowe produkty żywnościowe natychmiast, jak tylko stają się dostępne oraz szybko, chociaż po pewnym zastanowieniu, doceniało cechy wybranych produktów zbożowych z dodatkiem błonnika. Uzyskane wyniki badań nt. profilu potencjalnego konsumenta, który jest zainteresowany wybranymi produktami zbożowymi z dodatkiem błonnika, mogą być wykorzystane przez przedsiębiorców działających na tym rynku.

The aim of the study was to find consumers’ opinions about the importance of dietary fibre and to evaluate the selected cereal products with high fibre content. An empirical study was conducted by means of the author’s questionnaire, using the CAPI method, in October 2014 in a national group of 1013 adult consumers. Relatively more women, younger people with the higher education level, living in larger cities, and respondents who declared buying new food thought that the amount of fibre needed to be controlled. It was also reported that relatively more women, younger people with higher education, living in larger cities, and people declaring to buy new food products as soon as they become available and fast, although after the consideration they appreciated the features of the selected cereal products with the increased fibre content. The results of studies on the potential consumer profile for cereal products with the added fibre may be used by the entrepreneurs operating in this market.

Цель изучения заключалась в выявлении мнения потребителей о значении клетчатки в диете и в оценке избранных зерновых продуктов с повышенным содержанием клетчатки. Эмпирическое изучение провели с использованием авторского опросника, по методу прямых интервью с помощью ЭВМ (CAPI) в октябре 2014 г. в национальной группе 1013 взрослых потребителей. От- носительно больше женщин, более молодых лиц, с более высоким уровнем образования, проживающих в более крупных городах, и респондентов, заявляющих о покупке нового пищевого продукта, считало, что следует контроли- ровать количество потребляемой клетчатки. Отметили тоже, что относительно больше женщин, более молодых лиц, с более высоким уровнем образования, проживающих в более крупных городах, и лиц, заявляющих, что они покупа- ют новые продукты незамедлительно, как только они появляются, и быстро, хотя после некоторого раздумья, хорошо оценило свойства избранных зерновых продуктов с добавлением пищевых волокон. Полученные результаты изучения профиля потенциального потребителя, который заинтересован в избранных зерновых продуктах с добавлением клетчатки, могут использоваться предпринимателями, действующими на этом рынке.
