W opracowaniu przedstawiono problem dotyczący alergii pokarmowej i związanego z tym bezpieczeństwa konsumentów. Scharakteryzowano skalę problemu oraz możliwe objawy alergii pokarmowych. Opisano regulacje prawne dotyczące alergenów pokarmowych, obowiązek informowania o alergenach konsumenta. Podkreślono rolę znajomości zagadnień alergii pokarmowej wśród pracowników zakładów gastronomicznych dla bezpieczeństwa konsumentów.

The paper presents the role of the problem related to food allergy and consumer safety. The scale of the problem and possible symptoms of food allergies were characterized. Legal regulations regarding food allergens, the obligation to inform consumers about allergens have been described. The role of knowledge of food allergy issues among employees of catering establishments for consumer safety was emphasized.
