Celem rozważań jest zdefiniowanie modelu atrybutów produktu żywności tradycyjnej wyodrębnionego na podstawie dyskusji wyników badań zrealizowanych w wybranych krajach europejskich, prezentowanych w literaturze. Do zdefiniowania modelu atrybutów produktu żywności tradycyjnej wyodrębniono atrybuty sensoryczne, funkcjonalne i symboliczne. Wyniki wskazują, że konsumenci, mimo wysokiej ceny tej żywności i czasochłonności przygotowania, cenią specyficzny smak, wygląd, wartość odżywczą, zdrowotność i bezpieczeństwo. Artykuł ma charakter koncepcyjny.

An aim of considerations is to define the model of attributes of the traditional food product separated on the grounds of discussion of results of surveys carried out in the selected European countries, presented in the literature. For the purpose to define the model of attributes of the traditional food product the authors separated the sensory, functional and symbolic attributes. The results indicate that consumers, despite high price of that food and time consumption of preparation, appreciate its specific flavour, appearance, nutrition value, health and safety. The article is of the conceptual nature.

Цель рассуждений – определить модель атрибутов традиционного продукта питания, выделенного на основе обсуждения результатов исследований, осуществленных в избранных европейских странах, представленных в лите- ратуре. Для определения модели атрибутов традиционного продукта питания выделили сенсорные, функциональные и символические атрибуты. Результаты показывают, что потребители, несмотря на высокую цену этих продуктов питания и трудоемкость приготовления, ценят специфический вкус, выгляд, питательную ценность, оздоровительные качества и безопасноть. Статья имеет концептуальный характер.
