Przepis kulinarny jako przedmiot badań lingwistyki kontrastywnej

Celem niniejszego artykułu jest ukazanie możliwości poznawczych badań nad kulinariami w ujęciu tekstologii kontrastywnej. Celem rozważań jest odpowiedź na pytanie, dlaczego warto analizować przepis kulinarny jako gatunek mowy w ramach tekstologii kontrastywnej, mimo że należy on do gatunków o standardowej strukturze. Zadaniem artykułu jest również przybliżenie aspektów i założeń tekstologii kontrastywnej. Rozważania zamyka przykładowe porównanie dwóch przepisów pochodzących z różnych czasów i kultur, które obrazuje, jakie różnice językowe (i nie tylko) wynikają z tego rodzaju analiz.

In the article the author draws the attention to use of the prototype of the recipe by the hearing impaired persons. The departures from the prototype on the structural level as well as language deformations were observed. The texts were also analysed from the perspective of Polish sign language interferences with Polish language. Analysis of the material allowed to make conclusions related to genology competencies of hearing impaired persons. In most cases the characteristics of the prototype were met. The language deformations and language errors did not obscure the text purpose. The analyses indicated that the pathological application of the prototype on the stylisticlexical level does not lead into communication failure as long as the prototype was applied in the structural, cognitive and pragmatic aspects.

The culinary recipe is a genre that has undergone numerous modifications related to its transmission medium over the centuries. Originally, it functioned in the oral form, but with the development of writing, it began to appear in the written form as well. After the invention of audiovisual media, cooking advice began to be made available via television and, over time, also via the Internet (YouTube, Instagram, TikTok). The first recipes were formulated by people widely regarded as authorities, but later any Internet user could become a creator. The type of audience has also changed. The passive reader has become an active and dynamic co-creator of culinary advice.

Przepis kulinarny jest gatunkiem, który przez wieki ulegał licznym modyfikacjom, związanym z medium, za pośrednictwem którego był przekazywany. Pierwotnie funkcjonował w formie ustnej, a wraz z rozwojem pisma zaczął pojawiać się również w formie pisemnej. Po wynalezieniu mediów audiowizualnych zaczęto udostępniać porady kulinarne za pośrednictwem telewizji, a z czasem również Internetu (YouTube, Instagram, TikTok). Pierwsze przepisy tworzone były przez ludzi uważanych powszechnie za autorytety, a z czasem ich twórcą mógł stać się każdy użytkownik Internetu. Zmienił się również typ odbiorcy. Bierny czytelnik stał się aktywnym i dynamicznym współtwórcą porady kulinarnej.
